Chick pea, Radish & Cilantro Salad

Ingredients:

  • 2 cups cooked chickpeas drained; or canned chickpeas rinsed and drained
  • 5-6 radishes , quartered and sliced 1/8 - inch thick
  • 1 cup chopped cilantro
  • ½ to 1 tsp fine sea salt
  • ½ tsp chili powder
  • 3 Tbsp fresh lime juice or to taste
  • 1 Tbsp olive oil
  • 2 Tbsp crumbled cotija (Mexican dry cheese), optional

Preparation:

Combine the chickpeas, radishes, cilantroSalt and chili powder in a bowl, and mix well. Add the lime juice and oil, toss. Adjust seasoning, if necessary. SprinkleWith the cheese, if desired. Enjoy!!
